Chicken Salad
I’ve tried several varieties of chicken salad over the years, and this is the one I personally like the most. It’s great on croissants, crackers, or just by itself.
Ingredients
- 2 lb boneless skinless chicken breasts (This makes about 2.5 c chopped; it’s also great to add dark meat to the mix. I poach the chicken that I use, and I find that to be SO much better in chicken salad.)
- ½ c chopped pecans
- 1 c mayo (I use only Duke’s)
- 1 T Dijon
- 1 c red grapes, quartered
- 2 stalks celery, diced
- 3 green onions (green and white parts), sliced
- 2 T chopped parsley (or 2 t dried)
- 2 T chopped tarragon (or 2 t dried)
- 1 lemon, juiced (should make about 2 T)
- ½ t seasoned salt
Instructions
Combine all ingredients, chill, and enjoy!
